Growing up, dinners were a pretty standard affair in my family – meat and potatoes. Peeling potatoes was a nightly chore for me, a task as routine as setting the table. Mashed potatoes, with their simple additions of milk and butter, were a staple. The highlight? Chinese takeout night, featuring Chicken Chop Suey and fried rice, a delightful potato-peeling reprieve!
Fast forward to today, and life in the kitchen has changed dramatically. I married someone incredibly skilled in the culinary arts, especially when it comes to Chinese cooking. Stir-fries became part of my repertoire, and mashed potatoes took a backseat. “NO MORE MASHED POTATOES!” was a sentiment I embraced, at least for a while.
But recently, nostalgia for those comforting, familiar flavors crept back in. While browsing Pinterest for dinner inspiration during a grocery run with my husband, I stumbled upon a Salisbury Steak recipe from Ree Drummond, the Pioneer Woman. Knowing Ree’s reputation for delicious, approachable recipes, I figured this Pioneer Woman Salisbury Steak had to be a winner.
Pioneer Woman Salisbury Steak Recipe Patties in Skillet

Ingredients
Meat Mixture:
- 1 1/2 pounds lean ground beef
- 1/2 cup seasoned breadcrumbs
- 1 Tbsp ketchup
- 2 tsp dry mustard
- 4 dashes Worcestershire sauce
- 1 cube beef bouillon, crumbled (or powdered beef base)
- Salt and pepper to taste
- 1 Tbsp butter
- 1 Tbsp olive oil
Gravy:
- 1 whole onion, halved and thinly sliced (or diced if preferred)
- 2 cups beef broth, plus more for thinning if needed
- 1 Tbsp ketchup
- 1 tsp seasoning sauce, such as Kitchen Bouquet (optional)
- 4 dashes Worcestershire sauce
- 1 tsp cornstarch (optional)
- Salt and pepper to taste
Directions
- Prepare the Meat Patties: In a mixing bowl, combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, crumbled beef bouillon, salt, and pepper. Knead the mixture until well combined. Form the meat mixture into 4-6 oval patties. To give them a classic Salisbury steak look, create shallow lines across the patties with the side of a knife.
- Cook the Patties: Heat the butter and olive oil in a large skillet over medium-high heat. Fry the Salisbury steak patties on both sides until they are browned and cooked through, ensuring no pink remains in the middle. Remove the patties from the skillet and set aside. Pour off any excess grease from the skillet.
- Make the Gravy: Reduce the skillet heat to medium. Add the sliced onions to the skillet and cook, stirring occasionally, until they become golden brown and softened, about several minutes. Pour in the beef broth, ketchup, seasoning sauce (if using), and Worcestershire sauce. If you prefer a thicker gravy, whisk the cornstarch with a little beef broth in a separate small bowl until smooth, then add it to the sauce. Stir the gravy and cook until it slightly reduces and thickens.
- Combine and Simmer: Season the gravy with salt and pepper to taste. If the gravy is too thick, add more beef broth to reach your desired consistency. Return the cooked Salisbury steak patties to the skillet with the gravy. Spoon the gravy generously over the patties, and let them simmer gently for a couple of minutes, allowing them to heat through and absorb the flavorful gravy.
We served this incredibly flavorful Pioneer Woman Salisbury Steak with creamy mashed potatoes enriched with sour cream, cheddar cheese, milk, and fresh green onions. Alongside, we had peas and onions for a balanced meal. It was a sweet moment teaching my daughters how to peel, mash, and serve the potatoes, bringing my own childhood kitchen experiences full circle.
