Pioneer Woman Cheese and Corn Chowder Recipe

Ingredients:

  • ½ cup (4 tablespoons) Butter
  • 1 medium Yellow Onion, chopped
  • 3 slices Bacon, diced
  • 3 medium Bell Peppers (1 red, 1 yellow, 1 orange), finely diced
  • 5 ears fresh Corn kernels, cut from the cob (or 2 ½ cans corn kernels, drained)
  • ¼ cup All-Purpose Flour
  • 3 cups Chicken Broth
  • 2 cups Half-and-Half
  • 1 cup Monterey Jack cheese, grated
  • 1 cup Pepper Jack cheese, grated
  • Salt and freshly ground Black Pepper to taste

Instructions:

  1. In a large, heavy-bottomed pot or Dutch oven, melt the butter over medium-high heat. Add the chopped onion and cook for 2-3 minutes until softened.
  2. Add the diced bacon to the pot and cook for another 2-3 minutes until lightly browned and crisp.
  3. Stir in the finely diced bell peppers and corn kernels. Cook for 5-7 minutes, stirring occasionally, until the peppers are slightly tender.
  4. Sprinkle the all-purpose flour evenly over the vegetable mixture. Stir well to ensure the flour is incorporated and cook for about 1 minute, allowing the flour to lightly toast.
  5. Pour in the chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and let it cook for 3-4 minutes, or until the chowder begins to thicken slightly. Reduce the heat to low.
  6. Stir in the half-and-half, and allow the chowder to gently simmer and thicken further for about 15 minutes, stirring occasionally.
  7. Remove the pot from the heat and stir in the grated Monterey Jack and Pepper Jack cheeses until they are completely melted and the chowder is smooth and creamy.
  8. Season the cheese and corn chowder with salt and freshly ground black pepper to taste.
  9. Ladle the Pioneer Woman Cheese And Corn Chowder into bowls and serve immediately. Enjoy this comforting and flavorful soup!
