Ingredients
- 2 large chicken breasts (or 4 small) – cooked and shredded or diced
- 16 oz box of Spaghetti, uncooked (pot-sized or broken into halves or thirds)
- 1 can (10.5 oz) Cream of Mushroom soup
- 1 can (10.5 oz) Cream of Chicken soup
- 2 ½ cups Cheddar Cheese, shredded (divided)
- ¼ cup Green Bell Pepper, diced
- ¼ cup Yellow Onion, diced
- 1 jar (4 oz) Pimentos, diced and drained
- 6 cups Chicken Broth, for poaching chicken and cooking spaghetti
- 1 teaspoon Seasoned Salt
- ⅛ teaspoon Cayenne Pepper (optional, for a subtle kick)
- Salt and Black Pepper, to taste
- 3 slices Bacon, cooked and chopped (for topping)
Instructions
- Preheat & Prep: Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish.
- Poach Chicken: In a saucepan, bring 6 cups of chicken broth to a boil. Add chicken breasts and poach for 15-20 minutes, or until cooked through. Remove chicken and let it cool slightly. Reserve the chicken broth in the pot. Chop or shred the cooked chicken.
- Cook Spaghetti: Using the same chicken broth, cook the spaghetti until al dente according to package directions. Drain the spaghetti, reserving 1 cup of the chicken broth.
- Combine Ingredients: In a large mixing bowl, combine the cooked spaghetti, chopped chicken, cream of mushroom soup, cream of chicken soup, diced green pepper, diced onion, diced pimentos, seasoned salt, cayenne pepper (if using), and 1 ½ cups of shredded cheddar cheese.
- Add Broth: Pour in 1 cup of the reserved chicken cooking broth and stir until all ingredients are well combined and the mixture is smooth and creamy.
- Assemble Casserole: Pour the spaghetti mixture into the greased casserole dish, spreading it evenly.
- Cheese Topping: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the casserole.
