Ingredients
For the Chicken & Vegetable Marinade:
- 4 tablespoons Canola or Vegetable Oil
- 2 tablespoons Worcestershire Sauce
- 1/3 cup freshly squeezed lime juice (about 2 limes)
- 2 cloves garlic – minced
- 2 tablespoons ground Cumin
- 2 tablespoons Chili Powder
- 1 teaspoon Smoky Paprika
- 1 teaspoon dried Cilantro or 2 tablespoons fresh – chopped
- ½ teaspoon Red Pepper Flakes
- 2 teaspoons brown sugar
- 1 teaspoon Kosher Salt
- 1 teaspoon ground black pepper
- 1 jalapeno Pepper – seeds and rib removed – diced – optional
Other Ingredients:
- 4 chicken breasts – skinless and boneless
- 4 Bell Peppers in different colors (Red, Orange, Yellow, Green) – sliced thin
- 2 Sweet Yellow Onions – halved and sliced thin
- 2 tablespoons Canola Oil
- 2 tablespoons butter
- Flour Tortillas – small are best – warmed slightly
Possible Toppings:
- Pico de Gallo
- Sour Cream
- Avocados
- Margarita Guacamole
- Shredded Cheese
- Beans
- Fresh Cilantro – chopped
- Salsa
- Lime Wedges
- Black Beans – drained
Instructions
Making the Marinade:
- In a medium bowl, combine all marinade ingredients. Mix thoroughly to ensure all spices are well incorporated.
- Divide the marinade into two medium bowls, ensuring equal portions in each.
Marinating Chicken and Vegetables:
- Place the skinless, boneless chicken breasts in one bowl containing half of the marinade. Turn the chicken to coat evenly, ensuring all surfaces are covered.
- In the second bowl with the remaining marinade, add the sliced bell peppers and onions. Toss to coat the vegetables completely.
- Cover both bowls tightly with plastic wrap or lids. Refrigerate for at least 1-2 hours to allow the flavors to penetrate the chicken and vegetables. Longer marinating times can enhance the flavor even further.
Grilling Chicken and Vegetables:
- Preheat your grill to high heat, aiming for a hot grilling surface to achieve nice char marks and quick cooking.
- Lightly spray a grill basket or tray with cooking spray to prevent sticking. Place the marinated vegetables in the prepared grill pan. Set aside temporarily.
- Once the grill is hot, carefully place the marinated chicken breasts directly onto the grill grates. Cook for approximately 4 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Use a meat thermometer to ensure accuracy.
- Remove the cooked chicken from the grill and wrap it loosely in aluminum foil. Allow the chicken to rest for a few minutes while the vegetables are grilling. Resting helps to keep the chicken juicy.
- Place the grill pan with the vegetables on the hot grill. Cook for about 10 minutes, or until the vegetables are tender-crisp and slightly charred, tossing occasionally to ensure even cooking.
Warming Tortillas:
- Microwave Method: Wrap the flour tortillas in a slightly damp paper towel. Microwave on HIGH for a few seconds until just warmed through. Be careful not to overheat, or they can become tough.
- Grill Method: Alternatively, wrap the tortillas in aluminum foil and place them on the grill for a few minutes. Heat for about one minute per side, turning once, until warmed.
Serving Pioneer Woman Chicken Fajitas:
- Arrange the grilled vegetables on a serving platter.
- Slice the rested chicken breasts into strips and place them on top of the grilled vegetables.
- Serve immediately with warmed flour tortillas and your choice of toppings, such as pico de gallo, sour cream, guacamole, shredded cheese, and salsa.
- Encourage everyone to assemble their own fajitas and enjoy!
