Ingredients

For the Creamy White Enchilada Sauce

  • 3 TBS butter
  • 3 TBS all-purpose flour
  • 3 ¼ cups chicken stock
  • 1 (4 oz) can diced green chilies
  • 1 cup salsa verde (spicy, if preferred)
  • 1 ½ cups sour cream
  • ½ teaspoon paprika
  • 2 cups shredded Monterrey Jack or Pepper Jack cheese (for extra creaminess, consider adding 4 oz cream cheese)
  • Salt and pepper to taste

For the Flavorful Chicken Enchilada Filling

  • 1 large Vidalia onion, finely chopped
  • 1-2 Jalapenos, finely chopped (adjust to your spice preference, see notes)
  • 1 (4 oz) can diced green chilies
  • ½ cup salsa verde
  • 4 cups shredded cooked chicken
  • ¾ cup chicken stock
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • ¾ cup heavy cream

For Assembly

  • 2 cups shredded Monterey Jack or Pepperjack cheese
  • 7-8 large flour tortillas (burrito size)

Instructions

Making the White Enchilada Sauce

  1. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly, to create a roux.
  2. Slowly pour in chicken stock, whisking continuously to prevent lumps.
  3. Add diced green chilies, salsa verde, sour cream, paprika, and cheese (and cream cheese, if using). Whisk until smooth and heated through, but do not boil.
  4. Season with black pepper and salt to taste. Set aside while you prepare the filling.

Preparing the Chicken Enchilada Filling

  1. Heat 2 TBS grapeseed or olive oil in a large skillet over medium heat. Add chopped onions and jalapeno and sauté for 2-3 minutes until softened.
  2. Add shredded chicken, diced green chilies, salsa verde, chicken stock, and paprika to the skillet. Stir to combine and heat through.
  3. Stir in heavy cream, salt, and pepper (and cayenne pepper, if desired, for extra heat).
  4. Heat until the mixture begins to gently bubble, then remove from heat and set aside.

Assembling and Baking the Enchiladas

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Spread a thin layer of the white sauce on the bottom of the baking dish.
  3. Fill each tortilla with a generous amount of the chicken mixture (about ½ cup). Sprinkle a bit of shredded cheese over the filling, then roll up tightly and place seam-down in the prepared baking dish. Repeat until all filling is used.
  4. Spoon the remaining white sauce evenly over the enchiladas.
  5. Bake for 20 minutes.
  6. Remove from the oven and sprinkle the remaining 2 cups of shredded cheese evenly over the top of the enchiladas. Return to the oven and bake for another 6-8 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
  7. Garnish with fresh parsley, cilantro, pico de gallo, and/or scallions before serving, if desired.

Recipe Notes

Adjust the spice level to your liking by adding more or fewer jalapenos, and including or excluding the seeds. For a spicier sauce and filling, use a hot salsa verde and consider adding a pinch of cayenne pepper. Feel free to add extra cheese inside the tortillas and on top for an even cheesier dish. This recipe makes approximately 7-8 large burrito-size enchiladas, or more if using smaller tortillas. For a richer, creamier sauce reminiscent of Pioneer Woman’s comforting style, consider adding 4 ounces of cream cheese to the white sauce.
