Thanksgiving is just around the corner, and you can bet this Pioneer Woman Peanut Butter Pie will be making another appearance. While I personally lean towards other flavors, the sheer enthusiasm this pie generates is undeniable. Unless someone has a peanut allergy, bringing this dessert is a guaranteed win.

So, what’s the secret to this unbelievably easy Pioneer Woman Peanut Butter Pie? It starts with a simple yet luscious peanut butter mixture.   • 1 Cup Smooth Peanut Butter
  • 1 8-Ounce Block of Cream Cheese, softened
  • 1 1/4 Cups Confectioner’s Sugar
  • 1 (8-ounce) Container of Cool Whip or other whipped topping, thawed
  • 1 Pre-made Oreo Pie Crust (or ingredients for homemade Oreo crust: 25 Oreo Cookies & 4 Tablespoons of melted Butter)
  • 10 Miniature Peanut Butter Cups, chopped (optional, for topping)

Instructions

  1. If making homemade Oreo crust: In a food processor, pulse 25 Oreo cookies until they are finely crushed and the cream filling is incorporated into the chocolate cookie crumbs.
  2. Pour 4 tablespoons of melted butter over the crushed Oreos and pulse again to combine.
  3. Press the Oreo mixture evenly into a pie plate to form the crust.
  4. Bake the crust in a preheated oven at 350°F (175°C) for 5-7 minutes. Let it cool completely before filling. (If using a pre-made crust, skip steps 1-4).
  5. In a large mixing bowl with an electric mixer, combine the softened cream cheese and peanut butter. Beat until smooth and creamy.
  6. Gradually add the confectioner’s sugar and continue to beat until well combined and smooth.
  7. Gently fold in the entire container of Cool Whip (or whipped topping). Mix on low speed or fold gently until just combined and the mixture is light and fluffy. Be careful not to overmix.
  8. Spoon the peanut butter mixture evenly into the prepared Oreo pie crust.
  9. If desired, sprinkle chopped peanut butter cups around the edges of the pie.
  10. Refrigerate the pie for at least 4 hours, or preferably overnight, to allow it to chill completely and set.
