Pioneer Woman Restaurant Salsa Recipe

This recipe is quick, easy, and yields a generous batch of delicious restaurant-style salsa.

Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients:

  • 1 can (28 ounces) whole tomatoes with juice
  • 2 cans (10 ounces each) Rotel diced tomatoes and green chilies, undrained
  • 1/4 cup chopped white onion
  • 1 clove garlic, minced
  • 1 whole jalapeno, quartered and thinly sliced (adjust to taste for heat)
  • 1/4 teaspoon granulated sugar
  • 1/4 teaspoon salt, or more to taste
  • 1/4 teaspoon ground cumin
  • 1/2 cup fresh cilantro, roughly chopped (add more to taste)
  • 1/2 whole lime, juiced

Instructions:

  1. Combine the whole tomatoes (with their juice), Rotel (undrained), chopped onion, minced garlic, sliced jalapeno, sugar, salt, cumin, cilantro, and lime juice in a blender or food processor.
  2. Pulse the mixture until you reach your desired salsa consistency. Some prefer it chunkier, while others like it smoother – pulse to your preference.
  3. Taste the salsa with a tortilla chip and adjust seasonings as needed. You might want to add a pinch more salt, cumin, or lime juice to achieve the perfect flavor balance.
  4. Refrigerate the salsa for at least one hour before serving to allow the flavors to meld together. Chilling also helps the salsa thicken slightly.
