Ingredients

  • 1 can (28 ounces) Whole Tomatoes with Juice
  • 2 cans (10 ounces each) Rotel Diced Tomatoes and Green Chilies
  • 1/4 cup Chopped White Onion
  • 1 clove Garlic, Minced
  • 1 whole Jalapeño, Quartered and Thinly Sliced (adjust to taste for heat)
  • 1/4 teaspoon Sugar
  • 1/4 teaspoon Salt (or more to taste)
  • 1/4 teaspoon Ground Cumin
  • 1/2 cup Fresh Cilantro, roughly chopped (add more to taste!)
  • 1/2 whole Lime, juiced

Instructions

  1. Combine whole tomatoes, Rotel, chopped onion, jalapeño, minced garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor.
  2. Pulse the mixture until you reach your desired salsa consistency. For a chunkier salsa, pulse less; for a smoother salsa, pulse more.
  3. Taste the salsa with a tortilla chip and adjust seasonings as needed. Add more salt, lime juice, or cilantro to your preference. For extra heat, add a bit more jalapeño or a pinch of cayenne pepper.
  4. Refrigerate the salsa for at least one hour before serving to allow the flavors to meld together beautifully. Chilling also helps to thicken the salsa slightly.
