Hot Artichoke Dip Recipe

Yields: 4 cups
Prep time: 10 minutes
Cook time: 20 minutes

Ingredients

  • 2 (14 oz) cans artichoke hearts, drained
  • 8 oz cream cheese, softened and cubed
  • 1 cup shredded parmesan cheese
  • 1 cup mayonnaise (Duke’s recommended for Southern flavor)
  • Garlic salt and black pepper to taste
  • Optional: Cayenne pepper for a hint of spice

Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C).
  2. Blend Initial Ingredients: In a food processor or blender, combine one can of drained artichoke hearts, cubed cream cheese, and mayonnaise. Pulse until roughly chopped and just blended – avoid over-processing for best texture.
  3. Combine and Season: Transfer the blended mixture to a bowl. Stir in the parmesan cheese, garlic salt, and black pepper. If desired, add a pinch of cayenne pepper for a subtle kick.
  4. Chop Remaining Artichokes: Roughly chop the remaining can of drained artichoke hearts into bite-sized pieces on a cutting board.
  5. Fold & Mix: Gently fold the chopped artichoke pieces into the cheese mixture.
  6. Bake: Pour the dip into a pie plate or oven-safe baking dish. Spread evenly.
  7. Bake & Broil: Bake for 15-20 minutes, or until heated through and bubbly around the edges. For a golden brown top, turn on the broiler for the last 2 minutes, watching carefully to prevent burning.
  8. Serve Warm: Let it cool slightly and serve hot with your favorite dippers such as tortilla chips, crackers, crusty bread, or vegetable sticks.

  • Mayo Matters: Using a full-flavored mayonnaise, like Duke’s, really enhances the Southern-style richness of this dip.
  • Spice it Up: For those who enjoy a little heat, a pinch of cayenne pepper or red pepper flakes adds a pleasant warmth without overpowering the other flavors.
  • Serving Suggestions: Beyond chips and crackers, consider serving this dip with toasted baguette slices, pita bread, or even crudités for a lighter option. It’s also fantastic spread inside a grilled cheese sandwich or as a topping for baked potatoes.
  • Make it Ahead: You can prepare the dip mixture ahead of time and store it in the refrigerator for up to 24 hours. Bake just before serving.
  • Individual Servings: For a fun twist, bake the dip in individual ramekins or small cast iron skillets for personalized appetizers, perfect for game day or movie night.
