- 1 large onion, diced
- 1/3 cup all-purpose flour
- 4 cups whole milk
- 2 cups half-and-half
- Salt and pepper
- 1/2 teaspoon ground nutmeg
- 4 broccoli heads, cut into florets
- 1/2 cup chicken broth
- 3 cups shredded sharp Cheddar cheese, more for garnish
