Ingredients

  • 1 can (28 ounces) Whole Tomatoes with Juice
  • 2 cans (10 ounces each) Rotel Diced Tomatoes and Green Chilies, undrained
  • 1/4 cup Chopped White Onion
  • 1 clove Garlic, minced
  • 1 whole Jalapeño, quartered and thinly sliced (adjust to taste for heat)
  • 1/4 teaspoon Sugar
  • 1/4 teaspoon Salt, or more to taste
  • 1/4 teaspoon Ground Cumin
  • 1/2 cup Fresh Cilantro, roughly chopped, plus more for garnish if desired
  • 1/2 Lime, juiced

Instructions

  1. Combine whole tomatoes, Rotel, chopped onion, minced garlic, sliced jalapeño, sugar, salt, ground cumin, fresh cilantro, and lime juice in a blender or food processor.
  2. Pulse the mixture until you reach your desired salsa consistency. For a chunkier salsa, pulse less; for a smoother salsa, pulse more. Be careful not to over-process.
  3. Taste the salsa with a tortilla chip and adjust seasonings as needed. Add more salt, cumin, or lime juice to your preference. If you want more heat, add a bit more jalapeño or a pinch of cayenne pepper.
  4. Refrigerate the salsa for at least one hour before serving. This allows the flavors to meld together beautifully. Chilling also enhances the texture. Serve cold with your favorite tortilla chips and enjoy!
