  • 2 cans (10 ounces each) Rotel Diced Tomatoes And Green Chilies
  • 1/4 cup Chopped White Onion
  • 1 clove Garlic, Minced
  • 1 whole Jalapeño, Quartered And Sliced Thin (adjust to taste for heat)
  • 1/4 teaspoon Sugar
  • 1/4 teaspoon Salt (or more to taste)
  • 1/4 teaspoon Ground Cumin
  • 1/2 cup Fresh Cilantro, roughly chopped (add more to taste)
  • 1/2 whole Lime, Juice of

Instructions

  1. Combine whole tomatoes, Rotel, onion, jalapeño, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor.
  2. Pulse until you reach your desired salsa consistency. For a chunkier salsa, pulse less; for a smoother salsa, pulse more.
  3. Taste and adjust seasonings as needed. Add more salt, lime juice, or cilantro to your preference. For extra heat, include more jalapeño or a pinch of cayenne pepper.
  4. Refrigerate salsa for at least one hour to allow the flavors to meld. Chilling also helps the salsa thicken slightly.
