Ingredients

Casserole Ingredients:

  • One 10-12 ounce can corn niblets, drained
  • One 10 ounce can creamed corn
  • 2 large eggs, beaten
  • 1/2 cup milk
  • 1 cup grated sharp cheddar cheese
  • 1/4 cup finely diced chives
  • 60 Ritz Crackers, crushed finely
  • 1/4 teaspoon black pepper

Topping (optional):

  • 20 Ritz Crackers, crushed coarsely for topping
  • 2 tablespoons melted salted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Butter a 9×13 inch baking dish or a medium casserole dish. (I used a 1 1/2 quart casserole dish).
  3. In a large bowl, mix together all casserole ingredients until well combined.
  4. Bake for about 50-60 minutes until set slightly and the internal temperature reaches at least 165°F (74°C) in the center. If using a 9×13 inch pan, cook for 35 minutes and check for set and temperature.
  5. If using the topping, mix together the topping ingredients. Sprinkle over the casserole. Return to the oven for another 10 minutes to brown the topping.
  6. Remove from oven and serve hot.
