Reflecting on the early days, the founder admits that Vesta’s future success was far from guaranteed. At just 26 years old, youthful ambition and perhaps a touch of naiveté played a role. However, just two months into the venture, the pivotal decision was made to promote Matty Selby, then only 23, from sous chef to executive chef.
