CHICKEN

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tablespoons rice wine or dry sherry
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper

  • 1/3 cup soy sauce
  • 1/4 cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 cup chicken broth

VEGETABLES & CASHEWS

  • 2 tablespoons vegetable oil
  • 1 onion, cut into wedges
  • 2 bell peppers (red and green), cut into 1-inch pieces
  • 1 cup broccoli florets
  • 1 cup cashews, raw or roasted
  • Green onions, chopped, for garnish (optional)

Instructions

  • In a medium bowl, combine the chicken cubes, 1/4 cup soy sauce, rice wine, 1 tablespoon cornstarch, 1 teaspoon sesame oil, ginger, and pepper. Marinate for at least 15 minutes while you prepare the vegetables.
  • In a separate small bowl, whisk together the sauce ingredients: 1/3 cup soy sauce, hoisin sauce, rice vinegar, honey, 1 tablespoon cornstarch, 1 teaspoon sesame oil, and chicken broth. Set aside.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • Add onion and bell peppers to the skillet and stir-fry for 3-4 minutes until slightly softened. Add broccoli florets and cook for another 2-3 minutes until vegetables are tender-crisp.
  • Pour the sauce over the vegetables in the skillet. Bring to a simmer and cook until the sauce thickens, about 1-2 minutes, stirring constantly.
  • Return the cooked chicken to the skillet and toss to coat with the sauce.
  • Stir in the cashews and cook for another minute until heated through.
  • Garnish with chopped green onions, if desired.
